Cold weather plus hot stew equals a tolerable winter. No one likes a cold, blustery day, but when you have a sweet and savory sausage stew to warm up your insides, you can't really complain.
This soup combines the sweet flavor of butternut squash with the savory saltiness of turkey sausage, tying it all together with a myriad of spices and a can of coconut milk. Add some rice on the side and you have yourself a fantastic, filling bowl of delicious.
To make this stew, you'll need:
1 butternut squash, peeled, seeded, and chopped
2 T. olive oil
1 onion, chopped
1 tsp. diced ginger
1 tsp. diced garlic
1 1/2 c. turkey kielbasa, sliced
2 T. curry powder
1/2 tsp. turmeric
1/2 tsp. ginger
1/4 tsp. sage
1 tsp. salt, or to taste
1/4 tsp. pepper
1 14 oz. can coconut milk
1 c. water or vegetable broth
In a pan over medium-high heat, sauté the onion in the olive oil until translucent, about 2-3 minutes.
Add the garlic, ginger, and kielbasa, sautéing until ginger and garlic is fragrant, about another minute.
In a separate bowl, mix all the spices together. When the garlic is fragrant, add the spices and stir, coating the contents of the pan in the spices.
Add the coconut milk and water or broth, stirring to distribute the spices.
Place the diced butternut squash into the pot and stir. Bring the contents of the pot to a simmer.
Cook for 20 minutes, or until squash is soft. (Cooking time will largely depend on how large you diced your squash).
Taste and adjust spices.
Serve with a side of rice and enjoy!
